2 – Aging
We believe the best recipe for an “Award Winning Steak” is a properly aged product. Whether you want Dry Aged or Wet Aged, TF Kinnealey & Co makes the commitment to age our products a minimum of 28 days. The aging process allows natural enzymes to breakdown the hard connective tissue and ensures maximum flavor and tenderness.
3 – Selection
After the aging process has completed, we weigh every strip, rib, and tenderloin and rack them according to eye size. We believe this final step ensures the end-user a consistent weight and proper eye size for the best finished product!
